Turkey Lettuce Cups
- 1 Head The Villages Grown Bibb Lettuce
- 1 Cup Leftover Turkey Breast from Thanksgiving Dinner
- 1 Cup The Villages Grown Hydrocrunch Lettuce
- ½ Cup The Villages Grown Broccoli Microgreens
- 1 TBS The Villages Grown Parsley Finely Chopped
- 1 TBS The Villages Grown Chives Finely Chopped
- 6 Each The Villages Grown Heirloom Medley Tomatoes Quartered
- 1 TBS Dressing of Choice (Vinaigrette, Caesar, Ranch)
- Peel back the Bibb Lettuce leaves to create individual lettuce cups.
- Chop Turkey into fine pieces and place in mixing bowl
- Chop Hydrocrunch lettuce and add to mixing bowl.
- Add microgreens, parsley, chives, tomatoes and dressing of choice to mixing bowl
- Blend all ingredients together with spoon until evenly distributed.
- Spoon mixture into lettuce cups and serve.
*Alternative suggestion: add a spoonful of cranberry sauce to the top of each lettuce cup.
