Mushroom Sausage Frittata

Ingredients

  • ½ medium yellow onion* from our Local Farm Network
  • ½ bell pepper* from our Local Farm Network
  • 3 cups Maple Brook mushrooms*
  • 6-8 oz pork sausage
  • 8 eggs* from our Local Farm Network
  • Handful of The Villages Grown Breakfast Microgreens Blend*

Directions

  1. Heat an oven proof skillet (12’ cast iron frying pan) over medium-high heat and turn on broiler (high) to preheat oven.
  2. Add sausage to pan and break apart with a wooden spoon or spatula while it cooks (no cooking fat required) If using a lean pork add a TBS of 15 Olives EVOO*.
  3. Add onion, pepper, and mushrooms and sauté, stirring occasionally, until veggies are cooked (8-10mins).
  4. Add beaten eggs. Let cook on stove top 1-2min, stirring a couple of times.
  5. Place skillet in oven and broil until eggs are completely cooked, puffed up and starting to brown on top (7-10min, varies oven to oven watch carefully).
  6. Top with The Villages Grown Breakfast Blend (make sure not to cook in oven).

Notes: Add veggies, meat or mushrooms you may already have in your fridge, using leftovers first, and garnish with your favorite toppings.
