Creamy Irish Onion Mashed Potatoes


  • 4 medium potatoes, peeled and cubed
  • 1/2 head of cabbage, thinly sliced
  • 1 small, sweet onion, chopped
  • 4 tablespoons butter
  • 1/2 cup milk or cream
  • Salt and pepper, to taste
  • Fresh Chives, chopped (as garnish)


  • Boil the cubed potatoes in salted water until they are tender, about 15-20 minutes.
  • While the potatoes are cooking, in another pot, steam or boil the sliced cabbage and chopped sweet onion. until it’s soft, about 10-15 minutes.
  • Once both the potatoes, cabbage and onion are cooked, drain them well and return them to their respective pots.
  • Mash the potatoes with 2 tablespoons of butter and the milk or cream until smooth and creamy. Season with salt and pepper to taste.
  • Mix the cooked cabbage into the mashed potatoes, combining them thoroughly.
  • In a small saucepan, melt the remaining 2 tablespoons of butter over medium heat until it starts to brown slightly, giving it a nutty aroma. Be careful not to burn it.
  • Pour the browned butter over the potato mixture and gently stir to incorporate.
  • Serve the dish hot, garnished with chopped chives or green onions if desired.
