Creamy Irish Onion Mashed Potatoes

Ingredients
- 4 medium potatoes, peeled and cubed
- 1/2 head of cabbage, thinly sliced
- 1 small, sweet onion, chopped
- 4 tablespoons butter
- 1/2 cup milk or cream
- Salt and pepper, to taste
- Fresh Chives, chopped (as garnish)
Directions
- Boil the cubed potatoes in salted water until they are tender, about 15-20 minutes.
- While the potatoes are cooking, in another pot, steam or boil the sliced cabbage and chopped sweet onion. until it’s soft, about 10-15 minutes.
- Once both the potatoes, cabbage and onion are cooked, drain them well and return them to their respective pots.
- Mash the potatoes with 2 tablespoons of butter and the milk or cream until smooth and creamy. Season with salt and pepper to taste.
- Mix the cooked cabbage into the mashed potatoes, combining them thoroughly.
- In a small saucepan, melt the remaining 2 tablespoons of butter over medium heat until it starts to brown slightly, giving it a nutty aroma. Be careful not to burn it.
- Pour the browned butter over the potato mixture and gently stir to incorporate.
- Serve the dish hot, garnished with chopped chives or green onions if desired.
