Cilantro Lime Rice


  • ½ cup finely chopped The Villages Grown cilantro
  • 1 cup Congaree Penn Long-Grain White Rice
  • 2 fresh or dried bay leaves
  • 1 ½ cups water or broth
  • 2 tablespoons Local Farm Network* lime juice
  • 1 teaspoon Local Farm Network* lemon juice
  • kosher salt, to taste


  • In a medium saucepan, combine the rice, bay leaves, and water and bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 18 minutes.
  • Remove the lid, fluff the rice with a fork, and cover. Let rest and absorb any steam for 10 minutes.
  • Remove the bay leaves, then add the lime juice, lemon juice, salt, and cilantro. Stir to combine.
  • Top with your favorite protein or vegetables.
