Cilantro Lime Rice


  • ½ cup finely chopped The Villages Grown cilantro
  • 1 cup Congaree Penn Long-Grain White Rice
  • 2 fresh or dried bay leaves
  • 1 ½ cups water or broth
  • 2 tablespoons Local Farm Network* lime juice
  • 1 teaspoon Local Farm Network* lemon juice
  • kosher salt, to taste


  1. In a medium saucepan, combine the rice, bay leaves, and water and bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 18 minutes.
  2. Remove the lid, fluff the rice with a fork, and cover. Let rest and absorb any steam for 10 minutes.
  3. Remove the bay leaves, then add the lime juice, lemon juice, salt, and cilantro. Stir to combine.
  4. Top with your favorite protein or vegetables.
